Does anyone know of some good ideas for a memorial candle lighting for a wedding ceremony?

I am getting married in 2 wks [NOV 14,2009] and my grandmother past away about 3 wks ago. My family is still a little torn up about it, and it was heartbreaking for my fiance and I as well. We bought a memorial candle to light during our ceremony to honor her, but my minister isn't too familiar with this. From what I hear this is a relatively new tradition. She asked me to gather some things for her and send to her so she can put something together, but I really don't know what I want her to say as we light the candle. Does anyone have any suggestions on a very short poem or few beautiful short words we can use. I am stumped!
